Oh boy! Sleep! That's where I'm a Viking!
I've been sleeping a lot lately and last night was no exception. I ended up going to bed around 2 am and not getting up until 1 pm (!!!). That's a bit much. I generally stay up fairly late, as does Husband, but sleeping until 1...well, that's a bit much.
I suspect it's from the Nyquil, so I'll be abstaining tonight. I have issues sleeping through the night and the Nyquil really helped. But I really hate sleeping the day away.
We had Barbie's Tuna Salad sandwiches today along with bowls of the matzo ball soup that I made yesterday. I substituted the dried minced onion for some chopped onion I had in the fridge and I liked it better. I'll probably still keep the dried onions around because they're good to toss into dip and such when an onion isn't handy or practical.

A dear friend served this at a party she had years ago and I can only think of one time I made tuna sandwiches not using this recipe since then. So good!
We didn't eat lunch until nearly 3, so we'll be having a late supper. I hope to make a meal kit that we picked up on Saturday. It's vegetarian, so I'm not too concerned that it's been sitting the fridge for so many days but it needs to be used up. We don't buy meal kits too often, they're too expensive and I like to have leftovers for the next day which meal kits generally do not have. But it's pretty rare to see one at the store that's vegetarian so we went for it.
I hung a load of laundry up to dry and still have room on my big rack for a small load. The basement hasn't flooded yet, but the rain has just begun so I 'm going to keep an eye on it.
Ugh. It's cold and dreary and I'm having a hell of a time getting motivated to do anything! Today is one of those days that I wish I was working. Future me will be kicking past me for not working as much this winter. Ah well.
