Of the Mushroom

I worked yesterday, today, and again tomorrow. It hasn't been particularly stressful, although it has been exhausting. I work at an inner city library that is well used. Unfortunately, it's a teen hang out spot and they're not as interested in reading as they are as being typical teens. Noisy, hormonal, and occasionally obnoxious. Good for the teens to be hanging out at the library, often stressful for the staff.  There's also loads of kids who come there to play video and board games, read, and play. I'm glad they're at the library, but the energy level can get really high. We're going to be short-staffed tomorrow so I'm going to bring snacks. Treats are always welcome there, and on a Monday is even better.

I had made some Mushroom Soup on Friday and brought it to work yesterday for lunch. It was delectable, as always. I love The Daring Gourmet's recipe. They're often more involved than I like for everyday cooking, but this soup recipe is easy enough for just that. As a matter fact, it was so damn good the first time I made it, I ended up making it again a few days later. It's that fucking good! It makes a decent amount of soup, but I've had to double it before and it tasted just as good. This is one of the few recipes I don't change at all. No reason to, it's perfect the way it is. Husband and I both love mushrooms so much we could eat them at most meals, so this recipe is in heavy rotation.

I'll bring the last of that soup to work with me tomorrow. I'm also softening an half a block of cream cheese right now and will be making the stuff for Cucumber Sandwiches. I don't think there's a ton of soup left and I thought I'd bring a sandwich with to fill out the meal. I also have some home canned applesauce left from canning last fall that I can bring with me, but supplies are running low. I like to can the applesauce in the smallest size jar; it's a single serving and perfect for lunches. I scored a ton of homegrown apples last fall. They were tiny in comparison to grocery store apples, and it took me HOURS to peel and chop make the actual applesauce. If I remember correctly, I was in the kitchen for 6 hours that day and nearly delirious by the end. It was well worth the effort and I've had a basically free side dish to pack in my lunch for months. I hope to get more this fall.


We ate at Leeann Chin's tonight, which I'm feeling a little guilty about. It was good, but not good for us. We have a couple of frozen pizzas but really nothing else that sounded good. Tomorrow I work until eight and won't want to go out after that. Pretty sure Husband isn't going to want to cook, so we'll be having one of those pizzas. Ugh. I really have to cook more before I work a several days in a row. Or at least have something to make that's better than frozen pizza. Well, healthier.
