When it rains, it snows
We've had a wild couple of days with a mix of winter and spring weather. Mother Nature is confused about the date. I suppose that's to be expected since we kinda fucked her over. That's climate change, baby! It's rained, snowed, sleeted, sleeted with thunder, snowed with lightening, and now it's just plain cold. The snow is heavy, wet, and sticky. It adhered so thoroughly to the shovels that we had to bang them on something after each scoop. We ended up only shoveling the front walk and steps, leaving the back until tomorrow. I had shoveled the back last night because my Wednesday night dinner friend came over and I didn't want her trudging through the snow, which should make it easier to shovel.
Other than shoveling, it's been a low key day. I took a break from cooking today since we have tons of leftovers that need eating and spent the day relaxing. I talked to my parents and got caught up on all their doings. I read. I took a nap. I drank some tea. I listened to music. It's been a lovely day.
I worked Monday and hated every minute of it. We were short-staffed which made it that much more stressful. I keep it under my hat that I'd rather fall down a flight of stairs than be there, but it's getting tougher. People either don't do their job or the do their job but complain endlessly about the silliest things. A lost stapler is enough to cause a meltdown, as does the return of said stapler by the employee who was using it. WTF, people??? I just smile and nod. There is no point in any of this.
I made a lovely Bolognese on Tuesday to eat on Wednesday. I picked up the meat from a local butcher shop and it was well worth it. Not the cheapest meat I've ever purchased, but not too much more than more local grocery store and infinitely better. We may not be doing very well going vegetarian, but I'm at least trying to buy better quality meats in smaller quantities. This was such a rich recipe that I doubt I'll make it again any time soon. But it was certainly good and we all loved it.
To offset the meat-laden Bolognese I made Singapore Noodles while it was simmering. These we ate for dinner that night, Tuesday. They were so good last month I decided to make them again, adding even more curry powder and some sugar snap peas that were looking a little sad. We both enjoyed it and there was at least 4 servings leftover, which will get eaten.
We had leftovers for lunch so I made veggie burgers and tator tots for dinner. We needed to finish off some buns that were in freezer getting in the way. I'm also trying to use up all the processed foods in the house to get rid of them and not replaced. We've never been big tator tot eaters but this winter we've gone through almost three bags. That's alotta tots. Not good.
